Arborio Rice

Lots of mushrooms.

This risotto is very rich in taste so I ate two third and it was enough for me so I kept the about one third portion for the next day.

Description of this dish.

"A mirepoix is a flavor base made from diced vegetables cooked—usually with butter, oil, or other fat—for a long time on low heat without coloring or browning, as further cooking, often with the addition of tomato purée, creates a darkened brown mixture called pinçage." Source: wiki

"Ragu is blanket term used to describe a rich, slowly cooked Italian meat sauce. Ragu is hearty, intensely flavorful (borderline stew-like!)"

"The ragu starts like a lot of Italian sauces, stews and soups, with Il Soffritto. What is this? Il Soffritto is very simply, finely chopped carrot, celery and white onion sauteed slowly with a little olive oil for about 10 minutes until soft but not browned."

Arborio Rice:
Arborio Rice doesn't get soggy in the sauce.

    1. The cheese taste is covered by the truffle oil taste. Is your hubby ok with truffle oil taste?

    1. Ya I also seldom eat lamb cos lamb dishes are not found in Chapfan dishes. Did the risotto u eat use arborio Rice?
