Dear Mun, again, I am learning so much from your posts and from PH's posts! Mung beans is something I am unfamiliar with. Soup on a cold rainy day is so comforting! My mother used to make chicken soup when I was a little girl and I loved it. I prefer rice in the soup to noodles.
ReplyDeleteWhen I make my own homemade chicken soup, I put either a chicken leg or chicken wings in first, allowing them to cook, which takes close to an hour. In the last 15 to 20 minutes, I add the rice, base, onions, cabbage (sometimes carrots, sometimes garlic). I prefer the vegetables to be a little crunchy rather than soggy.
