Lotus Root

I went to a new place (with air conditioner) that serves chap fan "mix rice" for lunch and this plate of food costs MYR7.50 with deep fried dory fish slices in Thai sauce, 2 mixed vegetable dishes and a quarter bowl of rice.

Lotus roots tend to turn dark after being cut unless the slices are soaked in a bowl of water with a little rice vinegar. The two mix vegetable dishes are: 1) stir fried lotus roots with celery 2) stir fried broccoli, cauliflower, sweet peas and carrots. I prefer the vegetables to be cooked until they are softer so it took me a long time to finish eating these not-so-soft vegetables on my plate.

  3. Me too, I prefer softer vegetables, although my mom disagrees with me. She thinks soft vegetables are overcooked and have lost most of their nutrients so it is pointless to eat those. Oh well..

    1. Almost all cooked veges lost most of their nutrients. I eat raw veges for nutrients, cooked veges for fibers.

  10. I like lotus root soup with pai kuat and peanuts although I don't eat the chunky lotus root after the soup's been boiled. I like thinly sliced lotus root stir fried with nam yue too...but it must be thinly sliced :)

  14. We absolutely love lotus root and have been having quite a lot of these since we moved to China. It's cheap and in abundance here....very fresh and young too. I usually stirfry the young ones. It's so sweet, crunchy and addictive!
